This begins in Spring when the new shoots below the fruiting branches are 'rubbed' away by hand to ensure that all the nutrients from the fertile Suffolk soil will reach the new grapes.

Victor Barley prunes the vines in late Summer

Growth is prolific in the Summer months so the vines are regularly tied back and trimmed by hand to ensure that the maximum amount of sunlight reaches the growing fruit during this crucial time. From the beginning of September, ripeness is monitored using a hand-held device called a refractometer and, once sugar and acid levels are in the correct balance, the grapes are ready for harvest.
